HOLY CREPE!
Paint me like one of your French crepes. Or at least that’s how I feel when I’m hosting make-your-own-crepe brunch.
Miss pandemic won’t let me go to France so I’m living my parisian fantasy right here at home. (and maybe even better?) I like my crepes crisp and thin, (no soggy girls in the house) and im so excited to share it with you.
This recipe is meant to be made with your best friends. The cherry on top to your spectacular brunch spread. To impress and indulge! And if you have no one to impress, do it for ya damn self! You only need like 3 ingredients to make these crepes and they're probably in your fridge-- bon appetit!
KALE TIP
︎ Make the batter the night before and store in the fridge. Your future self will be delighted the next morn. Give it a good mix before you pour it onto the pan. Crepes for breakfast in 5!
︎ Crepe Canvas: Spread a layer and leave the other half so that you can fold it over into a triangle. You can always spread more on top! - Thinly cut your fruit for an even crepe.

INGREDIENTS
Yields 4-5 crepes
Crepes:
1/2 cup flour
1 1/2 cup milk
1 tbsp unsalted butter, melted
1 egg
sea salt
Whipped Cream:
1 1/2 cups heavy whipping cream
1-2 tbsp granulated sugar
1 tsp vanilla extract / paste
Yields 4-5 crepes
Crepes:
1/2 cup flour
1 1/2 cup milk
1 tbsp unsalted butter, melted

Whipped Cream:
1 1/2 cups heavy whipping cream
1-2 tbsp granulated sugar

DIRECTIONS
Start by making your homemade whip cream and set aside!
Whipped Cream:
1. In a large bowl, use an electric whisk/ stand mixer to whisk heavy cream on medium speed. Add vanilla extract, and sugar, 1 tbsp at a time. Be careful to not over whip the heavy cream.
2. Once the cream has soft peaks reduce the speed and keep whisking until your desired consistency. Taste it! :) Add more sugar if needed, etc. Serve immediately or store in the fridge for 2-3 days.

2. In a large pan, spray with oil and leave on medium to med-high heat. While pouring 1/4 cup of crepe batter onto saucepan, finesse the crepe batter by spreading it into a thin circular shape. This takes some practice, but you'll love each crepe regardless.
1. Whisk everything together until frothy and silky-smooth. If you have a blender, lightly blend it. Set batter aside.
2. In a large pan, spray with oil and leave on medium to med-high heat. While pouring 1/4 cup of crepe batter onto saucepan, finesse the crepe batter by spreading it into a thin circular shape. This takes some practice, but you'll love each crepe regardless.
3. Cook each crepe until lightly golden, about 2-4 mins on each side. Serve immediately with Nutella, whip cream, fruit, ice cream, my granola, lemon, mint! The world is in your hands!
