behold... gorgeous rainbow okras + purple carrots from @goodapplefoods. When Aliza made these tasty garlicky roasted veggies for dinner I wanted seconds, and thirds... It’s fantastic for a quick appetizer, or a nourishing, substantial sidedish.
KALE TIP
︎The sizes of your veggies will determine how much oil/ time is needed in the air fryer/oven. bigger = lil more oil/time in oven. Try to cut them to be relatively uniform :)
︎ A good ol lemon squeeze before you serve will brighten up this dish for a perfect summer brunch app!
︎ Can be roasted in an oven or airfryer! We used an airfryer, but oven works :)

~20 okras*
3-5 carrots*
5 cloves of garlic, minced
1/2 cup parsley,
chopped
3 tbsp oil
salt
pepper

DIRECTIONS
Preheat oven/ airfryer to 400F.
1. Wash + dry vegetables. Roughly peel the carrots and cut off the ends.
2. Slice carrot longways into ~the same sizes as the okra.
3. In a large bowl, toss okras and carrots in oil, salt + pepper, and minced garlic.

4. Roast in airfryer at 400F for 15- 20 mins, tossing halfway through.
5. Remove okra into a large serving bowl and toss in parsley. Finish with a lemon squeeze if you have any!
