STRAWBERRY PEACH COBBLER

It's peach season


My OG brulee apple cobbler made way for this glorious summery cobbler. It’s bright, and well balanced with sweet peaches, tart strawberries, and slices of dry mango. Lol I already know what you’re thinking, mangos? Yeeeeeaauuuhh. Surprisngly enough, they add a nice bite to the cobbler, and I love a good bite ;) I’m not too crazy about peaches, but these @goodapplefoods peaches hit different. 


KALE TIP 

︎ You can make your crumble before and refridgerate it until you need to roll it out :)

︎I added tapioca starch because I like how goey tapioca texture is but conrstarch suffices!

︎ Lightly broil your cobbler at the end for a golden n crisp crust ~3-5 minutes. It can burn quickly so keep an eye on it! 

︎ Have fun lol! I added a tiny dry mango that I randomly had in the fridge. 

INGREDIENTS

Filling:
3    peaches
8    strawberries
3    tbsp brown sugar
vanilla bean paste
3 tbsp corn starch/ tapioca starch


Crumble:
1/2    cup oats
1/3    dark brown sugar
1/3    cup flour
2    tbsp cornstarch
1   tbsp sugar
6   tbsp unsalted butter
vanilla 
opt* dry mango
DIRECTIONS

Preheat Oven to 375F

Crumble:
1. Combine dry ingredients in a bowl and cut in butter. Add vanilla. Mix until homogeneous and forms a dough!

Filling:
1. Wash fruit and remove their cores. 

2. Thinly slice the peaches into a large bowl. Cut strawberries longways in half, and in half again. Opt* slice tiny dry mango

3.Add brown sugar, vanilla bean paste, tapioca starch, and toss untill mixed and slushy like.

4. Line an small pan with parchment paper and add your fruit mixture.

5. Crumble your dough on top of your fruit or perfectly roll it out and lay it on top (Kale would..)

6. Bake at 375F for ~35-40 minutes, or untill bubbly and golden.
